"For J's" Ono Molokai Sweet Potato Mochi Puffs
INGREDIENTS

1 package "For J's" Mochi Puff Mix

2 lb Molokai sweet potato (cooked)

1½ to 2 teaspoon powdered ginger

1 can coconut milk (unsweetened)
DIRECTIONS
- In a large mixing bowl, mash sweet potato.
- Add 1½ - 2 teaspoon powdered ginger and mix.
- Stir in coconut milk.
- Slowly add package of 4J’s Mochi Puff Mix and blend.
- Heat oil (approx. 2½ inches deep) in fryer 350° to 375°.
- Drop by rounded teaspoons (or use 1 inch cookie dough scooper) into hot oil and cook until light golden brown.
- Drain on paper towel.
- Serve warm or at room temperature.
