"For J's" Ono Molokai Sweet Potato Mochi Puffs

INGREDIENTS

  • 1 package "For J's" Mochi Puff Mix
  • 2 lb Molokai sweet potato (cooked)
  • 1½ to 2 teaspoon powdered ginger
  • 1 can coconut milk (unsweetened)

DIRECTIONS

  1. In a large mixing bowl, mash sweet potato.
  2. Add 1½ - 2 teaspoon powdered ginger and mix.
  3. Stir in coconut milk.
  4. Slowly add package of 4J’s Mochi Puff Mix and blend.
  5. Heat oil (approx. 2½ inches deep) in fryer 350° to 375°.
  6. Drop by rounded teaspoons (or use 1 inch cookie dough scooper) into hot oil and cook until light golden brown.
  7. Drain on paper towel.
  8. Serve warm or at room temperature.
