"For J's" Turkey Brine

INGREDIENTS

  • 1 cup "For J's" Hawaiian Chili Pepper Sea Salt
  • 1 cup brown sugar (packed)
  • gallons cold water
  • 12 to 14 lb turkey (thawed)

DIRECTIONS

  1. In a non-reactive container large enough to fit your thawed turkey, dissolve salt and sugar in water.
  2. Save the cooking timetable on the package of your turkey as you remove the wrap from your fully thawed turkey.
  3. Submerge turkey, breast down in prepared brine and chill for 8 to 10 hours, turning turkey half way through desired brining time.
  4. Drain turkey.
  5. Place turkey in roasting pan, then roast in oven according to the saved timetable from the package of your turkey.

If refrigerator space is an issue, you can use a cooler large enough for the turkey yet keep it submerged in the brine solution. While brining, always keep the turkey and solution chilled below 41°F (5°C) with ice packs. Use a thermometer to monitor the temperature of the brine.
